A good spice blend turns plain chicken, beans or roasted vegetables into dinner you look forward to. But most blend recipes come one at a time, each with its own measurements and a shopping list of jars you'll open once, and store-bought blends don't let you choose the salt, the heat or the freshness.
The Spice Blend Atlas is a 39-page guide to 30 blends inspired by cuisines from Louisiana and Jamaica to Morocco, Ethiopia, India and Japan. Every blend is written in parts, so it scales from a quarter-teaspoon taste test to a gift jar, with teaspoon, tablespoon and gram amounts worked out for you. A pantry plan built from all 30 recipes shows that 12 core spices and 4 everyday seasonings make 19 of them.
Unlike recipe roundups, the ratios were checked against published recipes and descriptions wherever we could find them, every blend is described respectfully as inspired by its region with notes on how real versions vary, and the practical details are covered too: toasting and grinding, salt-free cooking, how long spices keep their flavor, and the FDA's alerts about lead in some ground cinnamon.
